Spooky Espresso Glaze Brownies
Ding Dong! Be THAT person whose house everyone wants to come to for the best goodies on Halloween night. Espresso Glaze Brownies are irresistible. Even if you’re on a diet, not a coffee drinker, or don’t even like chocolate! This 5-minute glorious glaze is based on my mom’s signature Indian 'espresso coffee’ she makes at her dinner parties..the perfect instant espresso is now on a delicious brownie!
Makes 1 batch of brownies
Prep Time: 10 minutes
Cook Time: 1 hour
1 batch of brownies (boxed brownie mix or buy ready-made brownies.)
2 teaspoons espresso powder (found in the coffee or baking section of your grocery store)
2 tablespoons water
1 teaspoon vanilla extract
1.5 cups powdered sugar
1 tablespoon butter (salted or unsalted)
A small handful of candy eyes
Instructions:
Bake a batch of brownies using your favorite boxed brownie mix or buy ready-made brownies. Let cool.
Whisk together espresso powder, 2 tablespoons of water, and vanilla extract in a medium bowl.
Add the powdered sugar and SOFTENED butter (room temperature or microwave for 20 seconds to soften it). Do NOT melt it. Whisk together until smooth. (You may add 1 teaspoon of water if the glaze is too thick.)
Pour the glaze over the cooled brownies and smooth it with a spatula if need be.
Refrigerate for 10 minutes for the glaze to set. Cut into small pieces, arrange on a tray, stick in the candy eyes and watch the brownies disappear! Happy Halloween!
